Simple Cinco de Mayo Fiesta

Here are some tips and ideas to help you celebrate Mexico with all the right stuff this Saturday for Cinco de Mayo.  Gracias to my family for their input and photos!

If you can’t hire your own Mariachi band, download one on iTunes. Or you could opt for some Santana or one of my favorite Latin rock bands (although not purebred Mexican), Ozomatli.

Piñatas are great for kids and adults! Grab one at Party City and fill it with your favorite candy.

As long as we’re having fun, why not be the “hostess with the mostess” and greet your guests in a festive Sombrero?

Tacos, enchiladas, guacamole, and more. Mexican food just doesn’t quit. There are so many varieties of all the scrumptious dishes. My personal favorite is a Bobby Flay BBQ Chicken Quesadilla recipe my mom shared with me that I’ve adapted:

Bake 1lb of chicken thighs covered in BBQ sauce for 45 minutes to 1 hour.
Shred and coat with fresh BBQ sauce.
Set an 8” tortilla on a baking sheet and top with chicken and shredded cheddar.
Top with another tortilla, chicken, cheese, and a third tortilla.
Brush the top with olive oil and sprinkle with chili powder and bake at 450 for 8 minutes.

Last but not least, what’s a good party without great cocktails? Go to Mexico and they just about spit on Corona. Try Sol instead. Mojitos are always popular but a little labor intensive. Margaritas always make guests happy and there are tons of variations you can use to make a killer margarita. Here’s a recipe my dad uses:

Fill your glass halfway with ice and add:
1 shot tequila
Less than 1 shot of OJ
1/3 shot of Grand Marnier
Fill your glass until it’s full with Margarita Mix, or you can make your own mix.

My husband insisted I impart upon all of you the information we learned in Mexico. On an early trip to the tequila factory in Cozumel, I never thought I could stomach tequila for breakfast, but our guide proved to us that the good stuff never bites. Five shots later, I still remember that the best tequila is made from 100% Blue Agave. We also learned that the best tequila has a lower proof, so if you splurge, you can offer your guests a glass of sipping tequila that won’t have them sleeping at your house.

Have fun!
